Vegan Overnight Apple Bircher
On some mornings, I feel a little lazier than usual and don’t want to spend time making breakfast, It’s much easier to just grab something out of the fridge - especially so if i’m in a rush.
This bircher solves all of those problems. If you’re a fan of nuts and seeds and parfait jars, this one is for you.
Ingredients (serves 1-2)
200g plain soya yogurt
200ml plant milk of choice
2 tbsp chia seeds
2 tbsp milled/ground flaxseed
30g pumpkin seeds
2 tbsp desiccated coconut
1 apple, peeled (optional) and grated
Method (make the night before you want it)
1. If you haven’t already, grate the apple into a bowl.
2. Add in and combine all of the other ingredients thoroughly.
3. Add some extra plant milk if you think it’s needed - the mixture will thicken up overnight.
4. Put the mixture in the fridge overnight and eat it in the morning. I topped mine with some halved strawberries, desiccated coconut and granola. Be creative!
