Vegan Apple & Cinnamon Pancakes

This stack is flavoured with my favourite spice in autumn - ground cinnamon. You can’t go too far wrong by starting an autumnal day with a warm stack of pancakes!

These apple and cinnamon pancakes are soft, flavourful, warming and have just the right level of sweetness to them. I hope you love them as much as I do - let me know your thoughts and share your photos over on Instagram.

Apple and Cinnamon Pancakes - Ally The Earthling


Dry ingredients

3/4 cup plain flour

1/4 cup oats

2 tsp baking powder

1 tbsp milled/ground flaxseed

1 tsp cinnamon

1 tsp mixed spice

Wet ingredients (& sweetener)

1 cup plant milk of choice (I used unsweetened roasted almond milk)

1 tsp apple cider vinegar

1 tsp vanilla extract

1 tbsp sweetener of choice (I used soft brown sugar)


Cooked apple (bought, or made by peeling, coring and chopping some apples up, and then cooking them in a saucepan with a tiny bit of water and sugar until softened)

1/4 tsp cinnamon (mix this in with the cooked apple)

1 tbsp soya yoghurt

2 tbsp mixed nut butter

2 tbsp granola


1. Sieve and combine all dry ingredients in a bowl.

2. Create a well in the dry mixture, and then add in and fully combine the wet ingredients. Add in some more flour if you want the mixture to be thicker.

3. Heat a non-stick frying pan on medium heat and add a little bit of coconut oil (approx 1/2 tsp).

4. Pour a large serving spoon sized amount of pancake batter into the pan and let it spread into a small circle on its own (if you want thinner pancakes, spread it out yourself with a spoon after pouring).

5. Once the visible side of the pancake is almost all cooked through, use a spatula to carefully flip it onto its other side. Continue to cook it for about 1-2 more minutes and then transfer it to a plate. Cook the rest of the pancakes with the remaining batter.

6. Assemble your tower! I stacked most of the pancakes on top of one another, poured the yoghurt on, and then added a final two pancakes before topping it with the nut butter, cinnamon cooked apple and granola. This is honestly one of my favourite flavour, texture and colour combinations for pancake stacks (I think I have enough pancake experience to now have favourites, haha).
