Chocolate Caramel Bliss Balls Recipe | Vegan

Helloooo gorgeous souls! I shared this recipe a while back on Instagram - if you were following me at that point in time, you may remember that this was a recipe I wrote down and then accidentally deleted. I was so heart broken, because these turned out so incredibly well! I thought I'd never be able to make them again.

But thankfully, a week later, I discovered a feature on my notes app on my phone that allows me to revert all of my notes back to how they were on a certain date and/or time in the past. What a life saver! So here is the recipe from heaven.

Chocolate-Coated Bliss Balls - Ally The Earthling


1/2 cup walnuts

1/2 cup almonds

3/4 cup oats

1/2 cup ordinary dates, pitted

2 tbsp peanut butter

1 tbsp water

Pinch of salt

1/4 tsp vanilla extract

1 bar dark chocolate, melted (enough to coat the balls)

1 tbsp coconut oil

Toppings! I usually use salt flakes, chopped nuts, cacao nibs and/or oats


1. Place the dates in a heat-proof bowl and pour hot water over them until they're all covered. Leave to soak for 5-10 minutes (this will soften them).

2. Blitz the nuts in a food processor until almost ground.

3. Add in the oats and blend again until combined.

4. Drain the water from the dates.

5. Add the dates, peanut butter, water, salt and vanilla extract to the food processor and combine on medium-high speed. You may need to scrape down the sides a little every now and then (do not do this whilst the blade is spinning!).

6. Once everything has been combined and you have a sticky-ish, almost cookie dough kind of texture, stop the food processor and leave aside. Remove the blade if possible - if it isn't removable, be careful not to cut yourself on it later on.

7. Put the chocolate and coconut oil together in a heat-proof, microwavable bowl and put it in the microwave for 20 seconds maximum at a time, taking the bowl out to stir the chocolate in between every 20 seconds. Once it has almost fully melted, you can take it out and continue stirring it until it melts itself. If you leave it in the microwave for too long it can burn.

8. If the chocolate mixture is cool enough, take about 1/2-1 tbsp sized bit of bliss ball mixture from the food processor and roll it into a ball in your hands. Roll it around in the melted chocolate until fully coated, leave the excess to drip off and then transfer it to either a cooling rack or straight onto a plate. I used chop sticks to lift them in and out of the chocolate, just do whatever you find easiest!

9. Repeat step 8 with the rest of the mixture until you have rolled and coated all of the bliss balls.

10. Before the chocolate coating solidifies, top the bliss balls with whatever you like. Sea salt flakes, chopped hazelnuts, flaked almonds, cacao nibs, oats, you name it!

11. Leave in the fridge to solidify completely and devour them (or if you're feeling nice, share them).
