Chia Pudding and Peanut Butter Granola Jars
Chia seed pudding is such an easy thing to make overnight for the morning. And some granola to go with it? Hell yes to that, especially when it's peanut butter granola. See the recipe for these gorgeous jars below!
For the chia pudding:
3 tbsp chia seeds
8 tbsp plant-based milk of choice (I used soya milk)
For the granola:
3 cups oats (the bigger they are the better!)
1/2 cup smooth peanut butter (I used Meridian)
4 tbsp water
2 tbsp maple syrup
1/4 cup melted vegan butter/margarine
2 tbsp coconut sugar
For the rest of the jar fillings:
Vegan yoghurt (I used plain Alpro)
Fruit of choice
1. To make the chia pudding: Combine the chia seeds and milk in a small bowl. Leave in the fridge for 30 mins, then mix again with a spoon and get rid of an lumps where the seeds have stuck together in clumps. Leave to set overnight in the fridge.
2. To make the granola: Pre-heat the oven to 180C. Combine all of the ingredients for the granola excluding the oats. This mixture should be runny enough to mix in with the oats so that the stick together in clumps. If it isn't, add more water until it is. Then mix this in with the oats, test taste it and anything extra you think it may need (e.g. you might want to add a pinch of salt or more peanut butter). Transfer to a baking tray and bake in the oven for 30 mins. Take out and leave to cool completely.
3. In the morning, make your jars! I added the chia pudding first, followed by some kiwi and yoghurt, then topped each one with the granola and an extra piece of fruit.
