Chickpea Carawmel Cookie Dough
Never had cookie dough made from chickpeas before? Fear not! It (surprisingly) doesn't taste disgusting, it's actually super delicious and full of protein. So here's to trying new and delicious foods that you can even have for breakfast!
1 can (about 1 cup) cooked chickpeas, skinned (this takes a while but is so worth it - just pinch each chickpea between your fingers to remove the skin)
1/4 tsp vanilla extract
1/3 cup peanut butter
1 tbsp maple syrup/agave syrup
1. Blend the skinned chickpeas in a food processor with the maple syrup.
2. When the chickpeas and maple syrup are smooth, add all other ingredients (excluding the chocolate) and blend. It should come together to form a dough texture - if it's too stiff, add some water 1 tbsp at a time.
3. Transfer the mixture to a large bowl and mix in the chocolate chunks with a spoon - it might take a bit of effort but it will work eventually!
