Bright Purple Açaí Smoothie

At VegFest this year, the absolute super humans who are the people behind Sambazon sent me home with an entire tote bag full of their açaí packs. What a dream, right?!

I’d used açaí powder before, but found that it didn’t actually last very long and didn’t blend very well into smoothies either - it was a little 'grainy' for me. So, I’m sure you can imagine how excited I was to use these açaí packs and see if they were better.

Spoiler alert: they’re freakin’ amazing.

After a bit of research I found that it’s best to blend the açaí with other fruits; that’s what gives it the most impressive colour and perfect texture as a smoothie or as n’ice cream (banana ice cream). The recipe I used for this smoothie was a mixture of banana, berries, açaí and soya yoghurt to lighten and brighten the colour.

I think it’s safe to say it worked pretty well!

This is now one of my favourite ways to start the day, and I particularly love it after doing some exercise to cool me down. Plus it tastes a million times better than a plain protein shake if you’re into that, and you could add in some vanilla protein powder if you like.

Time to get onto the recipe!

Ingredients

2 packs of Sambazon açaí purée

1 banana, chopped and frozen

1 large handful of frozen mixed berries (I used blueberries, blackberries and raspberries)

4 tbsp plain soya yoghurt

Optional: unsweetened almond milk

Optional: 1 tap maple syrup

 

Method

1. Run the açaí packs under warm water for a minute before opening them. 

2. Put all of the ingredients into a food processor (I always find this works better than a blender when using frozen ingredients), and blitz them until it's fully combined and looks like a mixture between a smoothie and ice cream. You may have to scrap down the sides a few times during this step, and add in a little bit of plant milk if it isn't mixing well after a minute or two.

3. Serve straight away into two bowls, and top with whatever you like! I always top açaí bowls with my chunky granola, some chocolate, berries and seeds.
